Ninja Creami Strawberry Cottage Cheese Ice Cream
This easy Ninja Creami strawberry cottage cheese ice cream is the perfect sweet treat to prepare at home if you’re looking for a lighter, healthier, high protein dessert option! Made with just 4 ingredients including fresh, ripe strawberries, it’s packed with fruity flavor, satisfyingly creamy, and no – you can’t taste the cottage cheese! My husband would tell you that he hates cottage cheese, but he happily enjoyed several bowlfuls of this ice cream. The cottage cheese simply helps to create a creamy texture without the addition of more traditional, higher calorie options like heavy cream. You might notice a slight tanginess, but that’s balanced by a little sugar, and the flavor can be likened to strawberry frozen yogurt or strawberry cheesecake. Seriously – give it a try – I think you might just love it!

Ingredients
- Fresh strawberries
- Cottage cheese (I like to use fat-free, but you can use full-fat if you prefer!)
- Whole milk
- Caster sugar
- Optional: extra sugar or vanilla extract to sweeten, fresh strawberries and strawberry sauce, for serving

Your Step-by-Step Recipe for Ninja Creami Strawberry Cottage Cheese Ice Cream

- In a bowl, add the sliced strawberries and the sugar. Roughly mash with the back of a fork, stir well, and leave to stand for 5 minutes to allow the juices to come out

- In a blender cup, add the strawberry mixture, cottage cheese, and milk. Blend until smooth. I use a NutriBullet for this part of the process – if you don’t have a cup blender, you could use a bowl and an immersion blender instead!

- Taste the mixture to see if it’s sweet enough for your taste – if you like, you can add a little extra sugar or a teaspoon of vanilla extract

- Pour the mixture into your Ninja Creami tub, being careful to ensure that it doesn’t go above the fill line. Secure the lid, and freeze for 24 hours

- Remove from the freezer. Spin on the ‘Lite Ice Cream’ setting

- If your ice cream is crumbly, add a splash of milk and re-spin until you’ve achieved the desired consistency

- Serve with chopped fresh strawberries and strawberry sauce, if you like

Tips & Tricks for Making This Ice Cream
- You’ll notice that we’re using the ‘Lite Ice Cream’ setting on the Ninja Creami for this. It’s the best setting for cottage cheese based ice creams
- I find that after the first spin, this ice cream is often crumbly. Don’t panic though, because it’s very easily fixed! Just add a splash of milk and re-spin (once or twice, as necessary) until you’ve reached that creamy texture
- This ice cream is best enjoyed straight away. If you have any leftovers then you can of course refreeze them to enjoy another day, but I always think that the texture is at its best when it’s just been freshly spun! If you do want to refreeze, I’d recommend taking it out the freezer and letting it stand on the counter for at least 10 minutes so it’s soft and scoopable
- If you want, you can add some mix-ins! White chocolate chips would be a good option here
