10 Healthy Meal Prep Salads You’ll Actually Want to Eat

I’ve learned the hard way that if lunch isn’t already waiting for me, I’ll end up just grabbing whatever’s easiest (hello, sad beige sandwiches). That’s why I always try to keep a couple of meal prep salads in the fridge to cover lunchtimes so I can just grab and go. They keep well for days, and they make sure that there’s always something there to help me make healthier, protein-packed choices. 

This collection is full of salads that are a little more interesting than the usual lettuce and cucumber. You’ll find high-protein chicken salads, hearty tuna salads, and plenty of ideas inspired by different cuisines, so lunch never starts feeling repetitive. Make one for the week ahead, or pick a different favorite every Sunday. I hope you love these and they’ll help to make lunchtimes a bit more exciting!

Cottage Cheese Chickpea Salad

This has been a reader favorite for years now, and for good reason! It’s packed with protein, loaded with flavor, and it’s a million miles away from sad lettuce based lunchboxes that we all get sick of pretty fast when we’re trying to eat healthier. To keep things fresh, prep the Mediterranean veggies separately then just spoon over cottage cheese when you’re ready to eat. 

Chipotle Lime Chicken Salad

I could seriously eat this just straight from the bowl out the fridge. Shredded chicken is tossed with beans, corn, crunchy veggies, and tossed in a quick and easy homemade dressing with Greek yogurt and a touch of mayo. Load it into pitta bread or lettuce cups for a protein-packed, lighter lunch. 

Honey Mustard Chicken Salad

This one is creamy, crunchy, sweet, and savory, and it’s another one that shows that salads absolutely don’t have to be boring. I just love the combination of chicken with apples, celery, red onion, and pecans, and the easy homemade dressing really pulls the whole thing together. My favorite way to serve it is in a sandwich with wholemeal bread, and it keeps me full and satisfied until dinner. 

Santa Fe Chicken Salad

This Santa Fe chicken salad is surprisingly hearty and satisfying. With chicken, black beans, corn, and a creamy chipotle dressing, it’s got plenty of protein and just enough smoky spice to keep things interesting. Make a batch on Sunday and you’ve got an easy grab-and-go lunch for the next few days.

Chinese Chicken Pasta Salad

If, like me, you love a salad with plenty of crunch, this one won’t disappoint. Crisp vegetables, crunchy chow mein noodles, and tender chicken are all tossed in a creamy sesame soy dressing that gives it that classic Chinese chicken salad feel. It’s fresh, satisfying, and a great way to shake up your usual lunch routine.

Mexican Street Corn Salad

This is exactly how I keep meal prep from getting boring. There are so many ways to build a salad, and this Mexican street corn version makes a nice change from the usual leafy lunches. I like to add shredded chicken to turn it into a protein-packed lunch that keeps well in the fridge and travels brilliantly in a lunchbox.

Chicken & Grape Salad

Retro lunch vibes! Sweet grapes, crunchy celery, and a creamy lemon and dill dressing are a combination that’s stood the test of time. It’s high in protein, keeps well for meal prep, and is just as good piled into lettuce cups as it is in a sandwich.

Serves: 6

Ingredients:

  • 4 cups cooked shredded chicken breast
  • 2 cups red seedless grapes, halved
  • 4 celery stalks, chopped
  • ½ red onion, finely chopped
  • ½ cup chopped walnuts
  • 1 cup mayonnaise
  • Juice of 1 lemon
  • 2 tablespoons fresh dill, finely chopped
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

For serving (optional)

  • Lettuce leaves
  • Croissants, bagels, or sandwich bread

Instructions:

  1. Add the shredded chicken, grapes, celery, red onion, and walnuts to a large mixing bowl.
  2. In a separate bowl, whisk together the mayonnaise, lemon juice, dill, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  4. Cover and refrigerate until ready to serve.
  5. Spoon into lettuce leaves, or serve in croissants, bagels, or sandwiches for an easy high-protein lunch.

Classic Healthy Tuna Salad

A good tuna salad never goes out of style, and this is the one I keep coming back to. It’s made with simple ingredients, comes together in minutes, and is packed with protein to keep you full all afternoon. Keep a batch in the fridge for easy lunches, then serve it in sandwiches, lettuce cups, wraps, or with crackers whenever you need something quick.

Serves: 4

Ingredients:

  • 2 cans tuna in oil, drained well
  • ⅓ cup mayonnaise
  • ½ cup chopped red bell pepper
  • 1–2 tablespoons finely chopped onion
  • 1–2 teaspoons lemon juice
  • 1 tablespoon chopped fresh parsley or dill
  • ¼ teaspoon black pepper, plus more to taste
  • Pinch of salt

Instructions:

  1. Drain the tuna well, then add it to a large bowl and flake it with a fork.
  2. Add the mayonnaise, red bell pepper, onion, lemon juice, parsley or dill, black pepper, and salt.
  3. Stir until everything is evenly combined and creamy.
  4. Taste and adjust the seasoning with extra lemon juice, black pepper, or fresh herbs if needed.
  5. Serve immediately, or chill for 15–20 minutes to let the flavors develop before serving.

Jalapeño Popper Chicken Salad

Cream cheese, cheddar, bacon, and jalapeños make it rich, creamy, and just a little spicy, while the toasted panko adds the crunch that really brings it all together. It’s a fun way to shake up your meal prep when you’re tired of the usual chicken salad.

Serves: 4

Ingredients:

  • ½ cup mayonnaise
  • 4 oz cream cheese, softened
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • 1–2 teaspoons ranch seasoning, to taste
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded mild cheddar cheese
  • 1–2 jalapeños, deseeded and diced
  • 2 cups cooked chicken, chopped
  • 6 slices cooked bacon, crumbled
  • 2 tablespoons chopped fresh cilantro

Toasted Panko Topping

  • ½ cup panko breadcrumbs
  • 2 tablespoons unsalted butter

Instructions:

  1. In a large mixing bowl, beat together the mayonnaise, softened cream cheese, lemon juice, garlic powder, ranch seasoning, salt, and pepper until smooth and creamy. Taste and adjust the ranch seasoning if needed.
  2. Fold in the chopped chicken, bacon, jalapeños, cheddar cheese, and cilantro until everything is evenly combined.
  3. Cover and refrigerate for at least 1 hour. If you have time, chilling it overnight makes the flavors even better.
  4. Just before serving, melt the butter in a skillet over medium-low heat. Add the panko breadcrumbs and cook, stirring often, until golden and crisp, about 5 minutes. Remove from the heat and let cool slightly.
  5. Spoon the chicken salad into a serving bowl and sprinkle the toasted panko over the top. For even more crunch, stir a little of the panko directly into the salad before serving.
  6. Garnish with extra cilantro, jalapeños, or bacon, if desired.

Cottage Cheese Egg Salad

Blending cottage cheese into egg salad makes it extra creamy while giving it a protein boost, and the celery and chives keep it fresh and crunchy. If you’re new to using cottage cheese in salads, then trust me, it works, and it’s one of my favorite ways to add extra protein. 

Serves: 2

Ingredients:

  • 6 hard-boiled eggs
  • 1 cup cottage cheese
  • ½ cup celery, diced
  • ¼ cup chopped chives or green onions
  • 1 tablespoon mustard
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste

Optional Toppings

  • Chopped chives
  • Chili flakes

Instructions:

  1. Boil the eggs for 10–12 minutes, then transfer them to cold water to cool before peeling.
  2. Chop the eggs into small pieces and add them to a large mixing bowl.
  3. Add the cottage cheese, celery, chives, mustard, and lemon juice.
  4. Season with salt and black pepper, then gently stir until everything is well combined.
  5. Serve immediately, or refrigerate for a little while to let the flavors develop.
  6. Garnish with extra chives and a pinch of chili flakes, if desired. Enjoy on toast, in sandwiches, or on its own as a high-protein lunch.
