Meal Prep & Storage Tips

These lunch boxes work really well for meal prep and can be assembled a few days ahead of time for easy grab-and-go lunches throughout the week.

Store everything in airtight meal prep containers in the refrigerator for up to 3 days.

For the best texture, I like adding the nuts right before serving so they stay crunchy. If you’re using cut cucumbers or tomatoes, placing a paper towel in the container can also help absorb extra moisture and keep everything fresher.

Swaps & Variations

You can easily swap the bacon for turkey bacon, deli turkey, ham, chicken sausage, or even leftover grilled chicken.

Any cheese works, so feel free to use cheddar, pepper jack, mozzarella, gouda, or whatever you already have in the fridge.

Walnuts and cashews can be replaced with almonds, pistachios, pecans, or pumpkin seeds depending on your preference.

High Protein Adult Lunchable

This high protein adult lunchable is an easy grab-and-go lunch packed with eggs, bacon, cheese, nuts, and fresh crunchy vegetables. Great for busy weekdays and very cuztomizable!

Ingredients
  

  • Eggs
  • Bacon
  • Walnuts
  • Cheese cubed
  • Cherry tomatoes
  • Cucumber sliced
  • Cashews
  • Sesame seeds

Instructions
 

  • Cook the bacon in a skillet or in the oven until crispy.
  • While the bacon cooks, boil the eggs until hard boiled, about 9–12 minutes. Let them cool, then peel and slice in half.
  • Arrange the egg halves and bacon into the main sections of your lunch containers.
  • Fill the remaining spaces with the walnuts, cheese cubes, cherry tomatoes, and sliced cucumber.
  • Top with the cashews and a sprinkle of sesame seeds before serving or packing up for later.
