Strawberry Almond Overnight Oats
The most delicious overnight oats recipe, that’ll keep fresh in the fridge for up to 4 days! These strawberry almond overnights have chia seeds for extra fiber and plant-based protein, and the homemade strawberry compote is so easy to make but really takes things up a notch. The ultimate prep-ahead healthy breakfast!

These are naturally vegan, though they’re customizable so you can use a dairy-based milk if you prefer or if that’s what you’ve got in your fridge right now. For the Overnight Oats:
- Almond milk – Creates a creamy base with a light nutty flavor that pairs perfectly with the strawberries and almond butter.
- Creamy almond butter – Adds richness, healthy fats, and cozy almond flavor throughout the oats.
- Maple syrup – Lightly sweetens the oats without overpowering the fresh strawberry flavor.
- Vanilla extract – Adds warmth and bakery-style flavor.
- Salt – A small pinch helps balance the sweetness and brings out the almond flavor.
- Rolled oats – The hearty base that softens overnight into a creamy texture.
- Chia seeds – Help thicken the oats while adding extra fiber and texture.
For the Strawberry Compote:
- Fresh strawberries – Cook down into a soft, jammy topping with lots of fresh berry flavor.
- Maple syrup – Sweetens the compote and helps create that glossy strawberry sauce texture.

How To Make Strawberry Almond Overnight Oats
- In a bowl or large measuring glass, whisk together the almond milk, almond butter, maple syrup, vanilla, and salt until smooth. You can also blend everything if you want an extra creamy texture.
- Divide the oats and chia seeds between jars or containers with lids.
- Pour the almond milk mixture evenly between the containers and stir well. Let the mixture sit for about 10 minutes so it can start thickening.
- Meanwhile, make the strawberry compote. Add the chopped strawberries and maple syrup to a saucepan over medium heat.

- Cook for several minutes, stirring occasionally and gently breaking up the strawberries as they soften. Continue cooking until the mixture thickens and the strawberries mostly break down into a jammy compote. Set aside to cool slightly.
- Once the oat mixture has started thickening, stir it again and spoon the strawberry compote over the top.

- Cover and refrigerate overnight, or for at least 8 hours.
- Serve with fresh strawberries, toasted sliced almonds, or granola on top.

Storage & Serving
These overnight oats keep well covered in the refrigerator for up to 4 days.
Serve them cold straight from the fridge, or let them sit out for a few minutes first if you prefer a softer texture.
They’re really good topped with fresh strawberries, toasted sliced almonds, granola, extra almond butter, or a drizzle of maple syrup right before serving!
Variations & Swaps
- Almond milk gives the oats the strongest almond flavor, but any milk works including oat milk, dairy milk, soy milk, or coconut milk.
- Instead of making the strawberry compote, you can spoon your favorite strawberry jam over the oats for an even quicker version.
- Swap the strawberries for raspberries, cherries, blueberries, or mixed berries for different flavor variations.
- Peanut butter or cashew butter can be used instead of almond butter if that’s what you already have on hand.
- Add sliced bananas, granola, toasted coconut, or chopped nuts on top for extra texture.
- Stir in a scoop of vanilla protein powder if you want to make the oats more filling.
- For a more dessert-like version, add mini white chocolate chips or a drizzle of melted almond butter before serving.
