In a bowl or large measuring glass, whisk together the almond milk, almond butter, maple syrup, vanilla, and salt until smooth. You can also blend everything if you want an extra creamy texture.
Divide the oats and chia seeds between jars or containers with lids.
Pour the almond milk mixture evenly between the containers and stir well. Let the mixture sit for about 10 minutes so it can start thickening.
Meanwhile, make the strawberry compote. Add the chopped strawberries and maple syrup to a saucepan over medium heat.
Cook for several minutes, stirring occasionally and gently breaking up the strawberries as they soften. Continue cooking until the mixture thickens and the strawberries mostly break down into a jammy compote. Set aside to cool slightly.
Once the oat mixture has started thickening, stir it again and spoon the strawberry compote over the top.
Cover and refrigerate overnight, or for at least 8 hours.
Serve with fresh strawberries, toasted sliced almonds, or granola on top.
