Strawberry Almond Overnight Oats

Strawberry almond overnight oats are creamy, lightly sweet, and layered with a soft strawberry compote for an easy make-ahead breakfast that feels fresh and cozy all at the same time. Almond butter and chia seeds make the oats extra satisfying while the strawberries add bright fruity flavor.

Ingredients
  

  • 1 1/2 cups almond milk
  • 3 tbsp creamy almond butter unsalted
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup rolled oats
  • 2 tbsp chia seeds

Strawberry compote:

  • 1 cup fresh strawberries chopped (or frozen and mostly defrosted)
  • 2 tbsp maple syrup

Instructions
 

  • In a bowl or large measuring glass, whisk together the almond milk, almond butter, maple syrup, vanilla, and salt until smooth. You can also blend everything if you want an extra creamy texture.
  • Divide the oats and chia seeds between jars or containers with lids.
  • Pour the almond milk mixture evenly between the containers and stir well. Let the mixture sit for about 10 minutes so it can start thickening.
  • Meanwhile, make the strawberry compote. Add the chopped strawberries and maple syrup to a saucepan over medium heat.
  • Cook for several minutes, stirring occasionally and gently breaking up the strawberries as they soften. Continue cooking until the mixture thickens and the strawberries mostly break down into a jammy compote. Set aside to cool slightly.
  • Once the oat mixture has started thickening, stir it again and spoon the strawberry compote over the top.
  • Cover and refrigerate overnight, or for at least 8 hours.
  • Serve with fresh strawberries, toasted sliced almonds, or granola on top.
