Overnight oats are the ultimate prep-ahead breakfast, and today we’re making this variation packed with creamy peanut butter flavor and an easy no-cook strawberry chia jam layered right on top! All the nostalgic flavor of a peanut butter and jelly sandwich, but in a creamy, fiber-filled overnight oat form that’s perfect for meal prep. What You’ll Need

  • Milk of your choice – Helps soften the oats and creates the creamy base for the overnight oats. Any kind of milk works great! I use cows milk, but you can use oat milk, almond milk, whatever you already have at home.
  • Creamy peanut butter – Adds richness, protein, and that classic PB&J flavor.
  • Maple syrup – Lightly sweetens the oats without making them overly sugary.
  • Vanilla extract – Adds warmth and makes the oats taste extra cozy.
  • Salt – Balances the sweetness and brings out the peanut butter flavor.
  • Rolled oats – The hearty base that softens overnight into a creamy texture.

For the Chia Strawberry Jam:

  • Strawberries – Fresh strawberries create a naturally sweet homemade jam layer.

How To Make PB&J Overnight Oats

  • In a bowl or large measuring glass, whisk together the milk, peanut butter, maple syrup, vanilla, and salt until smooth. You can also blend everything if you want an extra creamy texture.

  • Divide the oats between jars or containers with lids.
  • Pour the peanut butter mixture evenly over the oats and stir well. Let the mixture sit for a few minutes so the oats can start absorbing the liquid.
  • To make the quick strawberry jam, blend the strawberries with maple syrup until smooth. Stir or blend in the chia seeds, then let the mixture sit for about 10 minutes so it thickens slightly.

  • Give the oats another stir, then spoon the strawberry chia jam over the top.
  • Cover and refrigerate overnight, or for at least 8 hours.
  • When ready to eat, stir the jam into the oats so everything gets swirled together. Top with fresh fruit, chopped peanuts, or extra peanut butter if you’d like.

Variations & Swaps

  • Swap the strawberries for raspberries, blueberries, blackberries, or mixed berries if you want to change up the flavor of the chia jam.
  • Adjust the maple syrup depending on how sweet you like your oats or how sweet your berries are naturally.
  • Crunchy peanut butter works if you want a little extra texture throughout the oats.
  • Almond butter or cashew butter can be used instead of peanut butter for a different spin on the classic PB&J flavor.
  • Add sliced bananas, chopped peanuts, granola, or mini chocolate chips on top for extra texture and flavor.
  • For even more protein, stir in a scoop of vanilla protein powder or a spoonful of Greek yogurt before chilling.

Serving Notes

These overnight oats are best served cold straight from the fridge.  They’re really good topped with fresh strawberries, sliced bananas, chopped peanuts, extra peanut butter, or a little granola for crunch.

The oats will keep well covered in the refrigerator for up to 4 days, which makes them perfect for easy grab-and-go breakfasts or snacks throughout the week.

  • 1 1/2 cups preferred milk dairy or any non-dairy equivalent
  • 3 tbsp creamy peanut butter unsalted
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

  • 1 ½ cups sliced strawberries fresh preferred
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup more as desired
