PB&J Overnight Oats

These PB&J overnight oats are creamy, nostalgic, and packed with peanut butter flavor layered with an easy homemade strawberry chia jam. They’re a fun make-ahead breakfast that tastes a little like a peanut butter and jelly sandwich in overnight oat form!

Ingredients
  

  • 1 1/2 cups preferred milk dairy or any non-dairy equivalent
  • 3 tbsp creamy peanut butter unsalted
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2/3 cup rolled oats

Chia Strawberry Jam:

  • 1 ½ cups sliced strawberries fresh preferred
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup more as desired

Instructions
 

  • In a bowl or large measuring glass, whisk together the milk, peanut butter, maple syrup, vanilla, and salt until smooth. You can also blend everything if you want an extra creamy texture.
  • Divide the oats between jars or containers with lids.
  • Pour the peanut butter mixture evenly over the oats and stir well. Let the mixture sit for a few minutes so the oats can start absorbing the liquid.
  • To make the quick strawberry jam, blend the strawberries with maple syrup until smooth. Stir or blend in the chia seeds, then let the mixture sit for about 10 minutes so it thickens slightly.
  • Give the oats another stir, then spoon the strawberry chia jam over the top.
  • Cover and refrigerate overnight, or for at least 8 hours.
  • When ready to eat, stir the jam into the oats so everything gets swirled together. Top with fresh fruit, chopped peanuts, or extra peanut butter if you’d like.
