They’re particularly good during fall, but I eat them all-year round!

These come together super fast and they last for up to 4 days in the fridge, so you can prep a batch for the week ahead. They taste like a real treat but they’re balanced, nutritious, and will keep you full until lunchtime. How To Make Apple Pie Overnight Oats

  • In a small saucepan over medium heat, combine the apples with 1 tablespoon maple syrup and ½ teaspoon cinnamon. If your apples are on the firmer side, add a small splash of water to help them soften.
  • Cook for about 5–7 minutes, stirring often, until the apples are soft and lightly caramelized. Set aside to cool slightly.

  • In a bowl or large measuring glass, whisk together the oat milk, maple syrup, vanilla, cinnamon, and salt.
  • Divide the oats and chia seeds between jars or containers with lids.
  • Pour the milk mixture evenly between the jars and stir well. Let the oats sit for about 10 minutes so they can start thickening, then stir again to redistribute the oats and chia seeds.
  • Top each jar with the cooked apples.
  • Cover and refrigerate overnight, or for at least 8 hours, until thick and creamy. The oats will keep well in the fridge for up to 4 days.

Variations & Swaps

  • Any milk works, including almond milk, dairy milk, soy milk, or coconut milk.
  • Honey can be used instead of maple syrup if preferred.
  • Try pears instead of apples for a slightly different cozy fall flavor.
  • Add chopped pecans or walnuts on top for crunch and extra texture.
  • Stir in a spoonful of Greek yogurt or protein powder if you want to make the oats more filling. Just bear in mind that it might change the texture slightly and you might need to add a little extra liquid if you’re using protein powder!
  • Raisins or dried cranberries work really well mixed into the apple topping if you want to level up a bit!
  • For extra dessert vibes, add a sprinkle of granola or crushed graham crackers before serving.
  • You can leave the apples raw if you want a quicker version, but cooking them gives the oats much more of that apple pie flavor!
