I go through phases where I get really into meal prep, then life gets busy and I fall out of the habit. The one thing that always gets me back on track? The Instant Pot!
It’s just so easy to make a big batch of something without standing over the stove. Whether it’s shredded chicken for wraps, a pot of chili for busy evenings, or even a batch of rice to use as the base for different meals, a little bit of effort now makes the rest of the week so much easier.

Ingredients:
For the Chicken
- 2 pounds boneless, skinless chicken breasts
- ¾ cup chicken broth
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- ¼ teaspoon red pepper flakes
For the Bruschetta Topping
- 3 cups cherry tomatoes, halved
- 1 tablespoon extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 small shallot, thinly sliced (optional)
- ½ teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
For Serving (Optional)
- Cooked jasmine rice
- ¼ cup fresh basil, thinly sliced
- ¼ cup freshly grated Parmesan cheese
Instructions:
- Add the chicken breasts, chicken broth, garlic, Italian seasoning, salt, black pepper, and red pepper flakes to the Instant Pot.
- Lock the lid in place and set the valve to Sealing. Cook on High Pressure for 10 minutes, then allow a 5-minute natural release before carefully releasing the remaining pressure.
- Transfer the chicken to a plate and shred it with two forks, then return it to the pot and toss it with the cooking juices.
- While the chicken is cooking, make the bruschetta topping. In a medium bowl, combine the cherry tomatoes, olive oil, balsamic vinegar, garlic, shallot (if using), salt, and pepper. Stir everything together until well combined.
- To serve, spoon the chicken over cooked jasmine rice, then top generously with the fresh bruschetta mixture. Finish with plenty of basil and a sprinkle of freshly grated Parmesan.
