Crockpot Mississippi Steak Bites

My crockpot Mississippi steak bites are packed with flavor, easy to make, and just perfect for serving over mashed potatoes for a family dinner. I’ve also served these up as an appetizer for parties and game days – just add toothpicks so everyone can help themselves, or pile into buns for a real crowd pleaser!

These steak bites start with a quick sear in a hot skillet, which gives the beef extra flavor before everything heads to the slow cooker. From there, the steak simmers low and slow with onions, garlic, ranch seasoning, au jus gravy mix, butter, beef broth, and plenty of pepperoncini peppers and juice. As it cooks, the sauce turns rich and buttery, and the steak becomes beautifully tender.

  • Sirloin steak – Cut into bite-sized chunks so every piece gets coated in that rich, buttery sauce. Sirloin stays tender while still holding its shape in the slow cooker.
  • Olive oil – Used for searing the steak and building extra flavor right from the start.
  • Onion – Adds sweetness and helps create a savory base as it cooks down.
  • Garlic – Brings warmth and depth to the sauce.
  • Au jus gravy mix – Gives the sauce that rich, beefy flavor without a lot of extra ingredients.
  • Ranch seasoning mix – The classic Mississippi ingredient that adds tangy, savory flavor to the whole dish.
  • Butter – Makes the sauce rich and silky.
  • Beef broth – Keeps everything juicy and helps create plenty of flavorful sauce.
  • Pepperoncini peppers – Add that signature tangy kick that balances all the richness perfectly.
  • Pepperoncini juice – Don’t forget it! The juice adds brightness and gives the sauce its bold Mississippi-style flavor.

How To Make Crockpot Mississippi Steak Bites

  • Heat a large skillet over medium-high heat with a little olive oil. Add the steak bites in batches and sear for 2–3 minutes per side until nicely browned. You’re not cooking them through here, just building flavor. Transfer the steak to the slow cooker as you go.

  • Top with the onion, garlic, au jus gravy mix, ranch seasoning, butter, pepperoncini peppers and juice, and beef broth.

  • Cover and cook on low for 6–8 hours or high for 3–4 hours, until the steak is tender.
  • Give everything a good stir before serving so all that savory sauce coats the steak bites!

Storing & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3–4 days.

To reheat, warm the steak bites gently on the stovetop over medium heat for about 10–12 minutes, stirring occasionally until everything is hot and the sauce is rich and glossy again. If needed, add a splash of beef broth to loosen things back up.

Swaps & Variations

  • Sirloin is great for steak bites, but this recipe is flexible. Stew meat, chuck roast, flank steak, or even ribeye all work well depending on the texture and richness you want.
  • Want to switch things up completely? You can make a chicken version using boneless chicken thighs or breasts instead of beef.
  • If you don’t have sliced pepperoncini peppers, just toss in 6–8 whole peppers instead. They’ll soften as they cook and still give you that classic tangy flavor.
  • Not an onion or garlic fan? You can leave one or both out and the recipe will still be packed with flavor thanks to the ranch, au jus, butter, and peppers.
  • If you want to make it into a full one-pot meal, add baby potatoes or carrots right into the slow cooker.

Serving Ideas

My favorite way to serve these Mississippi steak bites is over a big pile of creamy mashed potatoes. Absolute comfort food perfection!

They’re also great served over rice, buttered noodles, or egg noodles if you want something easy that soaks up all the extra sauce.

For a lower-carb option, try them with roasted vegetables or cauliflower mash.

These make such a good party food too. Keep them warm in the slow cooker and serve with toothpicks for an easy game day or appetizer situation, or load them into buns!
