Crockpot Mississippi Steak Bites

- 3 lbs sirloin steak cut into bite-sized chunks
- 2 tablespoons olive oil to sear beef
- 1 onion diced
- 3 garlic cloves minced
- 1 oz envelope au jus gravy
- 1 oz envelope ranch seasoning mix
- 1 stick butter 8 tablespoons
- 1 cup low sodium or unsalted beef broth
- 1 cup sliced pepperoncini peppers
- ¼ cup pepperoncini juice
Heat a large skillet over medium-high heat with a little olive oil. Add the steak bites in batches and sear for 2–3 minutes per side until nicely browned. You’re not cooking them through here, just building flavor. Transfer the steak to the slow cooker as you go.
Top with the onion, garlic, au jus gravy mix, ranch seasoning, butter, pepperoncini peppers and juice, and beef broth.
Cover and cook on low for 6–8 hours or high for 3–4 hours, until the steak is tender.
Give everything a good stir before serving so all that savory sauce coats the steak bites!
