5 Crockpot Comfort Food Recipes for Fall & Winter

It’s almost fall, and that means that it’s time to bring crockpot dinners firmly back into the rotation. The meals that fill the house with good smells all afternoon, don’t need much attention, and guarantee that everyone comes to the table hungry. There’s something about fall and winter that makes those cozy family dinners feel even better, and if you’re a regular reader, you’ll know just how much I love my trusty slow cooker. 
 

But if you want to use your crockpot to make life easier this year, you don’t need dozens of recipes to get you through the colder months. A small rotation of reliable favorites is what you need. These five slow cooker comfort food recipes are all completely different – from rich and creamy classics to hearty Cajun-inspired bowls – so you can mix things up without making dinner any more complicated.

Crockpot Shepherd’s Pie

If I can’t think what to make on a Sunday, shepherd’s pie is always near the top of the list. It never seems goes out of fashion, and everyone knows exactly what’s coming when they smell it cooking. Choose ground beef or lamb – both work great – and make sure to add the mashed potatoes towards the end of cooking to prevent sinking. 

Serves: 6

Ingredients:

For the Filling

  • 2 pounds ground beef or ground lamb
  • ½ large onion, chopped
  • 4 garlic cloves, minced
  • 1 (12-ounce) bag frozen mixed vegetables
  • 1½ cups beef broth
  • 4 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 (0.87-ounce) packet brown gravy mix
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

For the Mashed Potato Topping

  • 4 large Idaho potatoes, peeled and chopped
  • 4 tablespoons butter

For Serving

  • Chopped fresh parsley (optional)

Instructions:

  1. Heat a large skillet over medium heat. Add the ground beef or lamb and cook until browned, breaking it up as it cooks. Stir in the onion and garlic, then cook for another 3–5 minutes, until softened. Drain away any excess grease.
  2. Transfer the meat mixture to the slow cooker and spread the frozen mixed vegetables over the top.
  3. In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, brown gravy mix, Italian seasoning, salt, and pepper. Pour the mixture into the slow cooker and give everything a gentle stir.
  4. Cover and cook on Low for 6–8 hours.
  5. About 2 hours before serving, boil the potatoes in salted water for 15–20 minutes, or until fork tender. Drain well, then mash with the butter until smooth and creamy.
  6. Give the beef filling a quick stir, then smooth it into an even layer. Spoon the mashed potato over the top, spreading it right to the edges.
  7. Replace the lid and cook for the remaining 1½ hours.
  8. Finish with a sprinkle of chopped parsley and a little extra black pepper, then serve while it’s piping hot.

Crockpot Garlic Parmesan Chicken & Potatoes

I love this one because it always feels a little fancy, but it’s still totally achievable on a busy weeknight, and the chicken and potatoes combo is one of my all-time favorite comfort food options. Everything cooks in one pot so you don’t need any extra side dishes, and it always comes back into my rotation for fall and winter. 

Serves: 6

Ingredients:

  • 6 large bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1½ pounds baby potatoes, halved
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ¾ cup chicken broth
  • ¾ cup shredded Parmesan cheese
  • ¼ cup grated Parmesan cheese, for serving
  • Chopped fresh parsley, for serving

Instructions:

  1. In a small bowl, combine the salt, pepper, thyme, rosemary, and garlic powder.
  2. Sprinkle about three-quarters of the seasoning over the chicken thighs, saving the rest for the potatoes.
  3. Heat the olive oil in a large skillet over medium heat. Place the chicken thighs skin-side down and sear for 5–7 minutes, until the skin is golden and crisp. Transfer to a plate.
  4. Add the baby potatoes, garlic, chicken broth, and heavy cream to the slow cooker. Sprinkle over the shredded Parmesan and the reserved seasoning, then give everything a gentle stir.
  5. Arrange the seared chicken thighs on top of the potatoes.
  6. Cover and cook on Low for 6–8 hours or High for 3–4 hours, until the chicken is cooked through and the potatoes are tender.
  7. Sprinkle over the grated Parmesan and a little chopped parsley just before serving. Spoon plenty of the creamy garlic sauce over the chicken and potatoes when you dish it up. It’s too good to leave behind.

Crockpot Creamy Ranch Beef Tortellini

Of course a cheesy pasta dish deserves its place in any comfort food collection! This easy dinner is made with ground beef for extra heartiness, and it’s a great budget friendly option that’s always a big hit with kids and adults. 

Serves: 6

Ingredients:

  • 1½ pounds lean ground beef
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1½ cups beef broth
  • 1 (1-ounce) packet ranch seasoning mix
  • Salt and black pepper, to taste
  • 1 (19-ounce) bag frozen cheese tortellini, thawed
  • ½ cup heavy cream
  • 1½ cups shredded mozzarella cheese

Optional Garnish:

  • Chopped fresh parsley

Instructions:

  1. Heat a large skillet over medium-high heat. Add the ground beef, onion, and garlic, cooking until the beef is browned and no longer pink. Break it up with a spoon as it cooks, then drain any excess grease.
  2. Transfer the beef mixture to the slow cooker. Add the cream of mushroom soup, beef broth, ranch seasoning, salt, and pepper, then stir everything together.
  3. Cover and cook on Low for 3–4 hours.
  4. Stir in the thawed cheese tortellini, then cover again and cook for another 30 minutes, until the tortellini is hot and tender.
  5. Stir in the heavy cream and shredded mozzarella. Cover for another 5 minutes to let the cheese melt.
  6. Give everything a good stir until the sauce is creamy and the cheese has melted through.
  7. Sprinkle with a little chopped parsley if you like, then serve straight away. This is one of those dinners that’s even better with a chunk of garlic bread on the side.

Crockpot Gumbo

I love adding gumbo to the comfort food rotation because it makes a nice change from the usual creamy casseroles and pot roasts. It still has everything you want from a cozy dinner – a rich, slow-simmered broth, tender chicken, smoky sausage, and plenty of bold flavor – but with a little Cajun twist. Just add a scoop of rice and you’ve got a filling meal that tastes even better after a long day in the slow cooker.

Serves: 6

Ingredients:

  • ⅓ cup butter
  • ⅓ cup all-purpose flour
  • 4 cups chicken broth
  • 1 (28-ounce) can diced tomatoes, with their juices
  • 1¼ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 (13-ounce) ropes Cajun-style andouille smoked sausage, sliced
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon Cajun or Creole seasoning
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper, or to taste
  • Salt and black pepper, to taste
  • 2 bay leaves
  • 1 cup frozen okra, thawed (optional)

For Serving:

  • Chopped fresh parsley
  • Cooked white rice (recommended)

Instructions:

  1. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 2–3 minutes, stirring constantly until smooth.
  2. Reduce the heat to medium-low and continue cooking, stirring constantly, for 15–18 minutes, until the roux turns a deep brown color. Remove from the heat and let it cool for a few minutes.
  3. Add the chicken broth and diced tomatoes to the slow cooker, then whisk in the cooled roux until smooth.
  4. Add the chicken, sliced sausage, bell pepper, onion, garlic, Cajun seasoning, oregano, thyme, smoked paprika, cayenne, salt, pepper, and bay leaves. Stir everything together.
  5. Cover and cook on Low for 6–8 hours or High for 4–5 hours.
  6. About 15 minutes before serving, remove the bay leaves and skim off any excess grease from the surface if needed. Stir in the thawed okra, if using.
  7. Cover again and cook until the okra is heated through.
  8. Serve over cooked white rice with a sprinkle of fresh parsley.

Crockpot Cheesy Stuffed Pepper Casserole

If you love stuffed peppers but can’t be bothered with all the filling and stuffing, this casserole is the answer. It has all the same comforting flavors – seasoned ground beef, tender peppers, rice, and plenty of melted cheese – but everything cooks together in one pot instead. It’s an easy family dinner that feels familiar, filling, and is absolutely guaranteed to disappear quickly.

Serves: 6

Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 bell peppers, diced
  • 1 cup uncooked long-grain rice
  • 1 (15-ounce) can diced tomatoes, with their juices
  • 1½ cups beef broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ cups shredded mozzarella cheese

Instructions:

  1. Brown the ground beef in a large skillet over medium heat, breaking it up as it cooks. Drain away any excess grease.
  2. Add the cooked beef to the slow cooker along with the onion, bell peppers, rice, diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Stir everything together.
  3. Cover and cook on Low for 6–7 hours, until the rice is tender and most of the liquid has been absorbed.
  4. Sprinkle the mozzarella evenly over the top. Cover again and cook for another 20–30 minutes, until the cheese has melted.
  5. Give everything a gentle stir before serving so the melted cheese is mixed throughout. Serve while it’s hot, with a little garlic bread or a simple green salad on the side if you like.
