Crockpot Chicken & Green Bean Casserole

This might just be the ultimate comfort food shortcut dinner! My crockpot chicken and green bean casserole takes pantry staples and turns them into a cozy meal that tastes like the holidays but is absolutely do-able on busy days. It’s a recipe I often rely on for Sunday afternoons when I want something traditional but without a lot of work.

What You’ll Need

We’re using a lot of shortcuts here to make things as easy as possible – because making sauces from scratch isn’t something I want to do on busy days. The chicken cooks underneath a creamy mixture of stuffing, gravy, sour cream, and cream of mushroom soup.

The green beans give it that classic green bean casserole flavor, while the crispy fried onions on top add the crunch that really makes the dish feel familiar and super comforting.

How We’re Making This Crockpot Chicken & Green Bean Casserole

The chicken breasts go straight into the crockpot first with a simple seasoning blend, then everything gets layered over the top. A real dump and go kind of dinner!

Towards the end, the green beans get added in so they stay tender without overcooking. Once everything is hot and creamy, the casserole gets finished with crispy fried onions right before serving. Super simple.

Storage

Store leftovers in an airtight container in the refrigerator for 2–3 days. They reheat really well.

Serving Ideas

This is a real one pot meal and you don’t need much on the side. If you want to round things out a little more, serve it with warm dinner rolls, cranberry sauce, or a side salad.

It also works really well for casual holiday dinners or Sunday family meals when you want something comforting without making a full traditional spread.

Swaps & Variations

  • You can use turkey gravy or turkey stuffing mix instead of chicken for more of a holiday-style vibe.
  • Canned green beans work too, just drain them really well first so the casserole doesn’t end up watery.
  • Rotisserie chicken can be used instead of raw chicken breasts if you want to shorten the cooking time.
  • Cream of chicken soup works well in place of cream of mushroom if that’s what you have in your pantry.
  • If you like a little extra richness, you can sprinkle some shredded cheddar cheese over the top before serving.
