- 3-4 Granny Smith apples
- Juice from ½ lemon
- ½ cup brown sugar
- 1 ½ tsp ground cinnamon
- 1 cup water
- 2 tbsp cornstarch
- 8 oz cream cheese room temperature
- 4 oz Cool Whip
- 1 cup confectioners’ sugar
- 2 tsp vanilla extract
Start with the apple pie topping. Toss the apples with lemon juice, brown sugar, and cinnamon until everything is coated.
Add the apples to a large skillet with a splash of water and cook over medium heat until the apples soften and everything gets nice and bubbly. Mix a little of the liquid from the pan with the cornstarch until smooth, then stir it back into the apples. Let it cook for a few more minutes until the filling thickens into that glossy, apple-pie-style sauce. Set it aside to cool completely.
For the creamy layer, beat the softened cream cheese until smooth, then mix in the Cool Whip, powdered sugar, and vanilla until fluffy and creamy.
Spread the cream cheese mixture into your serving dish, then spoon the cooled apple pie filling over the top.
