12 Easy Dinners You Can Make with a Rotisserie Chicken
I’m a big (HUGE!) fan of picking up a rotisserie chicken from Costco whenever I know the week ahead is going to be busy. It’s one of my favorite dinner shortcuts because it instantly takes care of the most time-consuming part of the meal. By the time I get home, I’m already halfway to getting dinner on the table.
That’s exactly what these ideas are for. They don’t fight against the shortcut – they make the most of it! With a few easy supermarket ingredients and very little prep, you can turn one rotisserie chicken into a whole range of family-friendly dinners that feel completely different from one another. They’re quick enough for busy weeknights, simple enough that you don’t need to overthink them, and proof that low effort can still have a big payoff at the dinner table.
