Total Time 40 minutes mins
- 2 cups cooked long-grain white rice
- 4 cooked chicken sausages sliced
- 1 yellow bell pepper diced
- 1 yellow onion diced
- 1 can 14 oz diced tomatoes
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 3 tbsp chopped green onion for garnish
In a large skillet or Dutch oven, heat the olive oil over medium heat.
Add the sliced sausage and cook for 5 minutes, or until browned on each side. Set aside.
In the same skillet, add the diced onion and bell pepper to the skillet. Sauté for about 5 minutes, or until the onion becomes translucent and the bell pepper softens.
Add the sausage, and the rest of the ingredients (except the green onions). Stir well to coat the rice with the seasonings.
Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 5 minutes.
Remove the skillet from heat. Sprinkle the chopped green onions over the top. Serve hot.
