Crockpot Texas Roadhouse Pot Roast

- 1 onion diced
- 1 orange bell pepper diced
- 3 stalks of celery diced
- 3 pound beef chuck roast
- 3 garlic cloves minced
- ½ cup tomato sauce
- ½ cup BBQ Sauce
- 2 tablespoons worcestershire sauce
- 2 beef bouillon cubes
- ½ teaspoon dried thyme
- ½ cup water
- Parsley for garnish
Add the onion, bell pepper, and celery to the bottom of the slow cooker, then place the chuck roast right on top.
In a bowl, whisk together the garlic, tomato sauce, BBQ sauce, Worcestershire sauce, beef bouillon, thyme, and water until combined. Pour the mixture all over the roast and veggies.
Cover and cook on low for 6–8 hours, until the beef is fall-apart tender and the gravy is rich and flavorful.
Finish with a sprinkle of fresh parsley if you’d like, then serve everything over a big pile of creamy mashed potatoes with plenty of that savory BBQ tomato gravy spooned over the top.
