Ingredients
  

  • 1 onion diced
  • 1 orange bell pepper diced
  • 3 stalks of celery diced
  • 3 pound beef chuck roast
  • 3 garlic cloves minced
  • ½ cup tomato sauce
  • ½ cup BBQ Sauce
  • 2 tablespoons worcestershire sauce
  • 2 beef bouillon cubes
  • ½ teaspoon dried thyme
  • ½ cup water
  • Parsley for garnish

Instructions
 

  • Add the onion, bell pepper, and celery to the bottom of the slow cooker, then place the chuck roast right on top.
  • In a bowl, whisk together the garlic, tomato sauce, BBQ sauce, Worcestershire sauce, beef bouillon, thyme, and water until combined. Pour the mixture all over the roast and veggies.
  • Cover and cook on low for 6–8 hours, until the beef is fall-apart tender and the gravy is rich and flavorful.
  • Finish with a sprinkle of fresh parsley if you’d like, then serve everything over a big pile of creamy mashed potatoes with plenty of that savory BBQ tomato gravy spooned over the top.
