Total Time 4 hours hrs 5 minutes mins
- 2.5 lbs boneless skinless chicken thighs or breasts
- ½ cup soy sauce
- ½ cup honey
- 2 tablespoons tomato paste
- 1-2 tablespoons cornstarch
- 1 tablespoon sriracha
- 1 tablespoon rice vinegar
- ½ teaspoon toasted sesame oil
- 6 cloves garlic minced
- Chopped parsley or cilantro or green onions for topping
- Sesame seeds for topping
Add the chicken thighs to the slow cooker in an even layer.
In a bowl, whisk together the soy sauce, honey, tomato paste, cornstarch, sriracha, rice vinegar, sesame oil, and garlic until smooth and well combined.
Pour the sauce over the chicken, cover, and cook on low for 4–5 hours or high for about 2½–3 hours, until the chicken is tender.
Once cooked, shred or slice the chicken and stir it back into the sauce so every piece gets coated.
Finish with green onions, cilantro, parsley, or sesame seeds if you’d like, then serve it over rice with plenty of extra sauce spooned on top.
