Cheeseburger Loaded Sweet Potatoes

These cheeseburger loaded sweet potatoes combine all the flavors of a classic cheeseburger with cozy baked sweet potatoes for an easy, hearty dinner. Loaded with seasoned beef, melty cheddar, burger sauce, lettuce, tomatoes, onions, and pickles, they’re fun, filling, and family friendly!

Ingredients
  

  • 4 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 lb ground beef
  • ¼ salt
  • ¼ black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 cup cheddar cheese shredded
  • 1 cup iceberg lettuce shredded
  • ¼ cup white onion diced
  • ¼ cup tomato diced
  • ¼ cup baby dill pickles sliced
  • Optional: sesame seeds for garnish

Sauce Ingredients:

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp dill pickle juice
  • Salt to taste

Instructions
 

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Wash and dry the sweet potatoes, then place them on the baking sheet. Poke a few holes all over with a fork and rub them lightly with oil so the skins get nice and tender while baking.
  • Bake for 45–60 minutes, until the sweet potatoes are super soft and easy to pierce with a fork.
  • While they bake, cook the ground beef in a skillet over medium heat, breaking it apart as it cooks. Once browned, drain any excess grease and stir in the salt, pepper, garlic powder, onion powder, and paprika.
  • For the sauce, whisk together the mayo, ketchup, mustard, pickle juice, and salt until smooth and creamy. Pop it in the fridge until you’re ready to serve.
  • Lower the oven temperature to 350°F once the potatoes are done. Slice them open, fluff up the insides a little with a fork, then fill them with the seasoned beef and shredded cheese.
  • Return them to the oven for a few minutes until the cheese is melted and gooey.
  • Top with lettuce, onion, tomato, pickles, and a generous drizzle of sauce. Finish with sesame seeds if you want the full cheeseburger vibe.
