Crockpot Salsa Chicken
If there’s one recipe I think everyone should have in their back pocket, it’s this crockpot salsa chicken. You’ll need just 3 ingredients (plus some cilantro and lime wedges for garnish, if you like) and it can be the base for tacos, quesadillas, burrito bowls – basically you can make a batch of this and have dinner covered for days without getting bored! It’s simple, reliable, and always makes the whole week feel a bit easier.

Test Kitchen Notes: While I was testing this recipe, I tried adding all of the salsa at the beginning, but I kept coming back to a two-step method instead. Cooking the chicken in half of the salsa lets all those flavors soak into the meat, then stirring through the remaining salsa after shredding keeps everything tasting fresh and gives the finished chicken a much better texture. It’s a tiny extra step, but one that’s well worth it.

You only need a handful of ingredients to make this recipe. Boneless, skinless chicken breasts form the base, while taco seasoning and chunky salsa bring all the flavor. If you have fresh cilantro and a lime on hand, they’re a great way to finish the dish, but they’re completely optional.

Use a chunky salsa. It gives the chicken the best texture once it’s shredded. Smooth salsas work too, but the finished dish will be a little saucier.
Choose a salsa you already enjoy. Mild, medium, or hot all work, so use your favorite. The flavor of the finished chicken will depend on the salsa you start with.
Don’t skip the squeeze of lime. It’s optional, but a squeeze of fresh lime right before serving really wakes up all the flavors.
Shred the chicken straight in the slow cooker. It soaks up all those flavorful juices, so every bite stays tender and well coated.

I often make a batch with one meal in mind, then use the leftovers completely differently over the next few days. It keeps dinner interesting without having to cook from scratch every night.

Storage & Freezing
Store any leftover salsa chicken in an airtight container in the refrigerator for up to 4 days. It’s one of those recipes that’s just as useful for lunches and quick dinners later in the week as it is on the day you make it.
This recipe freezes really well too. Let the chicken cool completely, then transfer it to a freezer-safe container or bag, along with any extra sauce to help keep it nice and juicy. Freeze for up to 3 months and thaw overnight in the refrigerator before reheating.
To reheat, warm the chicken gently in the microwave or in a saucepan over a low heat until piping hot. If it looks a little dry, simply stir through a spoonful of salsa or a splash of water to loosen it back up.

Ingredients
- 3 pounds boneless skinless chicken breasts
- 2 teaspoons taco seasoning
- 2 cups chunky salsa divided
- Chopped fresh cilantro for serving (optional)
- Lime wedges for serving (optional)
Instructions
- Place the chicken breasts into the slow cooker and sprinkle over the taco seasoning.
- Pour 1 cup of the salsa over the chicken, then cover with the lid.
- Cook on Low for 6–8 hours or High for 3 hours, until the chicken is tender and easy to shred.
- Shred the chicken directly in the slow cooker using two forks.
- Stir through the remaining 1 cup of salsa until the chicken is evenly coated.
- Sprinkle with fresh cilantro, if you like, and serve with lime wedges for squeezing over just before serving.
